How to Preserve Iberian Salchichón When It's Still Vacuum Sealed

There are two methods for preserving food: freezing or vacuum sealing, and in the case of sausages and Iberian products, the latter is the better option. The reason we choose this method over freezing is that vacuum sealing preserves the aroma and nuances of the meat, allowing us to enjoy its full flavor and characteristics.

When buying vacuum-sealed Iberian salchichón, there are two ways to do it: whole or sliced. In both options, it's best to buy it packaged, unless you plan to consume it on the same day.

Therefore, if you have bought your meat vacuum-sealed, it doesn't matter in what format you have it because you should follow the same method for storage. It's not necessary to keep it in the fridge taking up space; just find a dry and cool place to store your salchichón, and a pantry can be a good spot. If you don't have one, don't worry; any cupboard away from heat sources is also suitable.

But, can you freeze Iberian salchichón for preservation? You can, but as we explained, vacuum sealing is more than enough because this preservation process extends the food's shelf life by up to three months.

How to Preserve Iberian Salchichón Once Opened

In this case, unlike the previous scenario, you need to consider the format in which you bought the salchichón. If you have a whole piece and have already removed it from its vacuum-sealed packaging, the best thing to do after opening it is to hang it upside down in the same place where it was. However, make sure it's clean, dry, and cool to prevent it from affecting the meat and spoiling it.

However, it's important to remember that Spain is a warm country, and during the summer, temperatures can rise significantly. In that case, it's better to store your salchichón in the fridge inside an insulated bag to ensure it doesn't spoil.

On the other hand, if you bought sliced salchichón, you must keep it in the fridge, and if you prefer, you can store the slices in an airtight container to prevent them from drying out due to the cold.
