Cava is one of the main products of Spanish gastronomy and, although it is generally produced in Catalonia, there are also those from La Rioja, Aragón, Extremadura or the Valencian Community. Obviously, each has its own nuances, but there is a characteristic shared by all, the bubbles.
Thanks to this sparkling touch, the cava becomes one of the best accompaniment to cured Jamón, resulting in to what is known as "pairing by contrast". In Enrique Tomás, as jamón experts, we recommend to combine the jamón with sparkling wines or some cava because thanks to them the taste buds open much more, so you will experience a sensation of incomparable freshness. You'll enjoy every slice like it's your first! That said, we will show you which cavas we have specially selected for you so that you can decide for yourself which product best meets your wishes.
TYPES OF CAVA PAIRING
In the market, there is a wide range of wines, and each variety has its own flavor, aromas, and characteristic nuances. At Enrique Tomás, we advocate for renewing our selection of wines and cavas every two years because we want to ensure that we always offer you the best. Our specialty is cured meats, but we want you to pair them with only top-quality products. Choose your favorite cava!
Before explaining the particularities of cava, it is worth noting that there are two types of pairings, the accompaniment pairing and the contrast pairing, within which cava is integrated.
CONTRAST PAIRING
Cava is the primary representative of this type of pairing, and thanks to it, you can distinguish both the flavor of the ham and that of the cava. When you take a sip of the latter or certain white wines, you will notice a pleasant sensation of cleanliness on your palate, allowing you to enjoy the delicacy of both the food and the drink equally, with no flavor standing out above the other.
Therefore, Brut cava is one of the best matches for Iberian ham and Gran Reserva, but it is not the only one; cavas with longer aging also pair equally well.
ACCOMPANIMENT PAIRING
This pairing achieves the fusion of the ham's flavor with that of the wine, creating a unique combination. Red wines and some white wines are the typical beverages for this accompaniment. However, it's important to note that not all dark wines are good companions for ham. The intensity of some of them can diminish the nuances of the meat.
