Another option is the classic vegetable medley made with seasonal vegetables. We've chosen cauliflower, an important source of fiber, vitamin C, and minerals like potassium and phosphorus. Also, artichokes, a diuretic and antioxidant food that should be enjoyed when it's in season. Green beans are also part of this medley, a vegetable rich in vitamins and minerals, along with onion, which adds great flavor and completes the dish.

Broad Beans with Iberian Ham

In spring, broad beans are in season. They belong to the legume family and pair perfectly with ham. We recommend using Iberian Ham, as it's a bit juicier and prevents the broad beans from becoming dry. Nonetheless, you can also achieve good results with serrano ham.

The steps are simple: Boil the broad beans for about 25 minutes, drain and set them aside. Meanwhile, in a pan with olive oil, fry the peeled and chopped onion. When it's golden, add the ham. Mix everything and let it cook for a few minutes so that the ham releases its fat. Add the broad beans, a little salt, and mix again. Let it simmer for 5 minutes so that the beans absorb the flavor of the mixture and enjoy!
