About the Paleta:
50 % Iberian Cebo Ham shoulder - Selection
50% Ibérico de Cebo Paleta is made from one of the most outstanding products of Spanish gastronomy: the Iberian pig, a breed found only on the Iberian Peninsula. At Enrique Tomás, we want to make the most of this delicacy by offering a top-quality product made from the hind leg of Iberian pigs, raised on a diet of feed, cereals and grass, and cured for 24 months.
The Iberian pig is a unique breed found only in Spain and Portugal. Its genetics allow the fat to penetrate the muscle, giving its meat white veins in the meat and a unique flavour and succulence.
At Enrique Tomás, we strive to bring out the best in this product and offer an Iberian Paleta de Cebo of exceptional quality. It is produced after a meticulous selection of the best specimens, followed by a rigorous curing process that ensures that all the necessary conditions are met to obtain a perfect and delicious ham.

We finally made it, as they say, the next one gets it! Now we have found the best combination of ham and red wine. Experts agree that the best way to combine ham is with white wine or cava, but there are always those who believe in red wine with ham. And it is not easy, you can have the best ham and a great red wine, but if you combine them, they will be killed in a ruthless duel. Separately, yes, but not together. There are very few red wines that allow us to enjoy them when paired with ham, and that also penetrate the aromas of the ham without letting us enjoy its texture and aroma. With this combination of red wine and DO Montsant, we have achieved the marriage of red wine and ham, because they are a perfect match. You will see...
The two vineyards from which this red wine comes are within the Montsant D.O.
They are 70% Garnatxa and 30% Syrah. They are vinified separately, with the alcoholic fermentation taking place in concrete tanks at a controlled temperature of between 24 and 26ºC. They are then transferred to 2000-litre wooden vats, where the second fermentation, the malolactic, takes place. After 12 months of ageing, the wine is blended with each of the varieties, choosing the right proportions of each to obtain a wine in which the qualities of each variety are perfectly blended.
