The price of Iberian ham varies mainly depending on two key factors: the pig's diet and the curing time .

  • Nutrition

A grain-fed ham, from pigs raised on grain, is not the same as an acorn-fed ham, from pigs raised free-range and fed primarily on acorns. Higher quality feed results in a more complex flavor and a higher value ham.

  • The cure

The curing time of the ham is crucial. Longer curing times allow the ham to develop deeper aromas, a more unctuous texture, and a more intense flavor, which directly influences its final price.

What Is the Difference Between Jamon (Ham) and Paleta (Shoulder)?

The difference lies in the part of the pig and its characteristics:

Comes from the hind legs. These are larger pieces (approx. 7–9 kg), with a longer curing period and a milder, more complex flavor.

  • Shoulder

Comes from the front legs. These are smaller (approx. 4–5 kg), with a shorter curing period and a more intense flavor.
