Let's Make the Soufflé

A dish that not only tastes delicious but also follows two principles we want to emphasize at Enrique Tomás: speed and simplicity, so you can enjoy cooking without spending too much time on it and dedicate your time to other tasks and pleasures if you wish.

Ingredients for 4 people

  • 2 slices of white bread
  • 100 grams of grated Emmental cheese
  • 80 grams of ibérico ham shavings
  • 3 eggs
  • 250 ml of milk
  • 5 ml of Dijon mustard
  • Ground black pepper
  • Extra virgin olive oil
  • Chives

Preparation

You'll need small molds like the ones you see in the photo to make and bake the soufflés.

  • Grease the four individual molds with a little bit of oil.
  • Chop the bread into small pieces and place it in a bowl. Add the ibérico ham shavings and mix everything with the cheese.

    • Lightly beat the eggs in another bowl. Add a dash of black pepper, the mustard, and the milk, and beat everything together.

    • Divide the mixture of bread, cheese, and ibérico ham among the molds, cover them with the mixture of eggs and milk, and let them rest for 30 minutes.

    • Preheat the oven to 180 ºC

    • Add some more Emmental cheese on top of the soufflés, a touch of chives, and bake for about 20-25 minutes. They will rise during baking but will deflate once removed from the oven.
