Christmas turkey

- 1 4-5kg turkey
- 1 onion
- 50 ml sweet wine
- 1 bar of lard
- salt
- 4 slices of hard bread
- 1 packet of dried apricots
- 1 packet of prunes
- 1 cup of chicken broth
- 200 g Iberian ham
- 1 apple
- 1 orange
- 1 handful of grapes
PREPARATION
1. Clean the turkey thoroughly, remove any remaining feathers, and rinse it with water. Once cleaned, place it on a baking tray and season the outside with your favorite herbs. Add salt and pepper and place the lard.
2. Inject 50 ml of sweet wine into various points of the breast and legs of the turkey to ensure that the stuffed turkey remains juicy.
3. Preheat the oven to 220 ºC. While it's heating up, prepare the turkey stuffing in a bowl. To do this, rehydrate the prunes and dried apricots and cut them into pieces.
Also, cut the Iberian ham into small pieces and add the diced bread to the mixture.
4. Pour the cup of chicken broth over it to combine everything.
5. Finally, add apple slices.
6. Stuff the turkey with the previous mixture. Insert the stuffing through the cavity with the help of a spoon to distribute it evenly.
7. Finally, before putting it in the oven, sew the opening with kitchen twine. This will prevent the filling from coming out during baking.
8. Now put the turkey in the oven. To calculate the time it should be in the oven, calculate 45 minutes for each kg of turkey. The ideal temperature is 180ºC.
It is important to baste the turkey with the juices it gives off or with the remaining poultry stock.
9. When it is ready, decorate it with the fruit you like best. We have chosen orange. And add some seasonal grapes.
