The fat in ham, considering it as the marbling within the meat, is very flavorful and its consumption is recommended. If it's from Iberian acorn-fed ham, it's more transparent and dissolves better between your fingers, as it has a higher concentration of oleic acid, a sign of higher quality.
On the contrary, the fat in white pork has a whiter tone and doesn't dissolve as easily between your fingers.
