Next, we provide you with all the elements you need to make the decision that best suits your palate and your budget. Most importantly, as specialists in this field, we want you to know that the best ham isn't the most expensive; it's the one you like the most.

Types and Qualities of Ham

First of all, you need to understand that Spanish ham comes in two classes:

Non-Iberian Ham or Gran Reserva

Gran Reserva ham or Gran Reserva ham comes from white pigs. The second important thing to know is that white pigs are raised all around the world. They are raised only on farms and are fed with fodder. It's the simplest of all types of ham and also the most affordable.

Iberian Ham

Iberian ham comes from Iberian breed pigs whose mothers are always 100% Iberian. It's only raised on the Iberian Peninsula itself. It's the only animal in the world that can infiltrate fat into its muscle. This characteristic is what makes its ham so special and succulent.

Furthermore, Iberian ham comes in different qualities and flavors, depending on the animal's diet and the percentage of Iberian breed it has, which can be 50%, 75%, or 100%. Of course, the prices will be related to the characteristics of the animal, but most importantly, to the curing process. A cebo Iberian ham, from a pig raised only on a farm with fodder and cured for 24 months, cannot cost the same as a bellota Iberian ham from a pig that has been raised in the wild and whose ham has taken over three years to cure, with the care and patience of an expert.

The different types of Iberian ham are:

Iberian Cebo Ham

This ham comes from an Iberian pig fed on farms with fodder and cereals. Our cebo Iberian ham is cured for a minimum of 24 months for hams and 18 months for shoulder cuts.

Iberian Bellota Ham

This bellota ham comes from Iberian breed pigs whose mothers are 100% Iberian and have been fed on acorns and wild fruits during the last 4 months of their lives, from November to March. (See Montanera)

100% Iberian Bellota Ham - Pata Negra

This 100% bellota ham comes from purebred Iberian pigs, meaning both the father and mother are Iberian. It has also consumed acorns and wild fruits during the last 4 months of its life.

Our Flavors and Formats of Iberian Ham

As with any good dish, while the ingredients are crucial, the hand of the chef shaping and flavoring them is even more important. The same applies to making ham. Iberian pigs are born the same all over Spain, but each producing region imparts its own special touch thanks to various elements: climate, diet, and most importantly, the manufacturing and curing process implemented by the expert "chef," as we call it at Enrique Tomás. Based on these elements, we have a classification of flavors that we'll detail for you below.

Our Flavors

The mildest and most palatable ham. It's the "all-purpose" ham because it's so pleasant and elegant that everyone enjoys it. It's always a safe bet, especially for gifting!

A ham full of nuances and very aromatic both in scent and taste. Perfect curing for the most ardent ham lovers.

Aromatic Flavor Ham

The flavorful ham is the newest of them all. Its production is smaller than in other geographical areas. It's very profound and different. It's like an explosion of flavor that lingers in your mouth and memory.

Flavorful Ham

The most international ham is the intense ham. Its unmistakable flavor stands out due to its richness and persistence on the palate. For ham enthusiasts with a discerning and enduring palate.
