Ingredients

  • 3 eggs
  • 900 g fresh spinach
  • 2 garlic cloves
  • 150 g mushrooms
  • 100 ml cooking cream
  • Parmesan cheese
  • Olive oil
  • Salt and pepper
  • Sliced jamón ibérico from Enrique Tomás

Preparation

Fill a frying pan with oil and place it over the heat to start by sautéing the garlic cloves, which you will have previously cut into small pieces.

Add your selection of mushrooms, cut into small pieces, and sauté them for around 5 minutes, until they have released all their water and begin to turn golden brown.

Now it is time to sauté the spinach in the frying pan together with the mixture for around 8 minutes, until you see that it has reduced sufficiently.

Pour the cooking cream over the top and add chopped slices of jamón ibérico from Enrique Tomás. Season with salt and pepper to taste. Keep in mind that when you add jamón to a recipe, you should reduce the amount of salt, as this product already gives the dish an intense flavour and a slightly salty taste.

Add the three eggs and cover the frying pan so that everything cooks for around 2–3 minutes, until you see that the cooking cream has reduced and the egg has set slightly.

Remove from the heat and add the pieces of Parmesan cheese on top. You will see how they melt and create a delicious mixture. All that remains is to enjoy!
