Differences between Cebo (White Label) and Cebo de Campo (Green Label)
The key difference lies in the animal’s lifestyle. While the standard pork (white label) is raised in enclosed facilities, the free-range pork (green label) lives freely in pastures or the countryside. By grazing on pastures, the free-range pig develops much more fat marbling in the muscle, resulting in superior marbling and juiciness that brings it very close to the quality of acorn-fed ham, but at a more affordable price.

Characteristics of our Free-Range Iberian Ham (Jamón Cebo de Campo)
Rearing: Free-range in the pasture, with daily exercise.
Feeding: Mixed diet: natural grasses, herbs, and roots, supplemented with high-quality grain feed.
Curing: A slow, artisanal process in the cellar, lasting over 24 months to allow the flavors to develop. Formats: Choose a whole piece (approx. 8 kg), pre-sliced packs for convenience, or our tasting packs.

What does the Green Label mean on Iberico Ham?
The green tag is the official symbol of the Iberian Quality Standard. It officially certifies that you are purchasing a Cebo de Campo Iberian Ham. This label ensures that the pig is at least 50% Iberian breed (a cross with Duroc) and, most importantly, that it has been raised in the open or semi-open countryside, making use of the natural resources of the pastureland.

What breed is the Cebo de Campo pig?
In our case, we offer 50% Iberian breed free-range Iberian ham. This ham comes from a cross between a 100% purebred Iberian mother and a Duroc father, which is what gives the meat its extra juiciness and marbling.
In what formats can I buy Jamón Cebo de Campo?
At Enrique Tomás, you can purchase your whole green-label ham (on the bone), pre-sliced, or in convenient shavings and cubes. A tip from our experts: If you’ve never cut ham before or feel unsure, it’s best to have it pre-sliced by our professionals. That way, you won’t hurt yourself, you’ll get the most out of the ham, and you can enjoy it little by little over several months while preserving all its flavor.
How long is a Green Label jamón cured?
Because the meat has a higher fat marbling, it requires a longer and more careful curing process than ham from farm-raised pigs. Our free-range cebo hams are aged in our cellars for more than 24 months to allow their flavors to develop and reach their peak.
