How long can I wait to start the chorizo

Vacuum sealing is a preservation process that helps extend the shelf life of food, especially meat, ham, or sausages, among others.

To vacuum-seal a product, all you need to do is place it in a container and, with the help of an oxygen extraction pump, isolate it from the air to prevent contact with the air from causing the piece to spoil.

This process can be used for both whole chorizos and sliced ones, but rest assured, the answer to how long vacuum-sealed chorizo lasts is the same in both cases, around three months. However, it's always advisable to check the packaging because that's where the manufacturer specifies the exact date from which you should not consume the piece you're taking home.

One of the main advantages of vacuum sealing, besides allowing you to enjoy your favorite products without needing to open them right after purchase, is that it doesn't require very specific storage conditions, similar to vacuum-sealed cheese. When storing it, it's sufficient to find a dark, dry place with an average temperature between 17 and 21°C.

Closets in bedrooms and bathrooms are, of course, not suitable, and a good place is the pantry at home. If you don't have one, you can also store it, for example, in a kitchen cabinet, but the key in this case is to ensure that there is no heat source nearby.

And, what happens with vacuum-sealed chorizo once it's opened?

It's important to note that once you open the package and remove the chorizo, the vacuum seal will be broken, and you should consume the meat as soon as possible. If it's a whole piece, slice a few pieces each day to serve them on their own or with some bread. If the first slices have dried out, you can use them to make chorizo croquettes.

If, on the other hand, you bought a pack of sliced chorizo and have already started it, there's no need to eat it all at once. However, as mentioned earlier, it's important not to leave it open for many days. If you want it to stay fresh, place it in an airtight container and store it in the refrigerator. When you want to enjoy your chorizo, simply take it out of the fridge, wait for the slices to naturally separate from each other, and savor it.
