Characteristics
Small plots of centuries-old vineyards distributed on the slopes of the mountain belt that makes up the Bierzo wine region. The vineyards are oriented to the east and north.
Vinification:
Upon arrival at the winery, the clusters are chosen on the selection table. Next, after destemming and without crushing, they are taken to the tanks where they ferment for 15 days at 25 ºC. During this period, they are lightly pumped and pumped with the idea of selective extraction and preserving all of their fruit.
Aging:
Brief aging of 3 months in oak barrels.

Climate:
Continental with marked Atlantic influence. The vegetative cycle in 2021 can be defined, in general, as colder than usual, especially with regard to summer and harvest days.
Harvest:
Manual harvest in small 12 kilogram boxes.
