Fino

Fino is a type of dry, light sherry wine produced in the region of Jerez de la Frontera, in the province of Cadiz, Andalusia. It is made from white grapes such as Palomino, and undergoes a special ageing process under a layer of yeast called “flor”.

During the winemaking process, the wine is first fermented in oak barrels, and then transferred to smaller barrels called “butts”, where it is covered with the flor layer. This yeast layer protects the wine from oxidation and gives it its distinctive flavour and aroma. Fino wine is aged for a minimum of two years, although some wines may be aged for longer.

Fino is a pale, clear sherry wine, with a dry flavour and a saline touch, and an aroma of almonds and yeast. It is served chilled, ideally at a temperature between 6 and 8 degrees Celsius, in a fine wine glass. It is usually enjoyed as an aperitif, with a wide variety of foods, from tapas to seafood, ham and cheese.

It is important to mention that Fino is a very delicate wine and should be consumed within a week after opening the bottle, as it loses its freshness and flavour over time. Furthermore, it is recommended to store Fino in an upright position so that the yeast does not settle at the bottom of the bottle.

In summary, Fino is a dry and light sherry wine with a unique flavour and aroma, which is enjoyed as an aperitif and is an important element of the gastronomic culture of Andalusia.
