Scrambled Spinach with Jamón, mushrooms and eggs

Scrambled Eggs with Spinach, Ham, Mushrooms, and Egg




TOTAL TIME: 25 min

  • 3 Eggs
  • 900 grams Fresh Spinach
  • 2 Cloves of Garlic
  • 150 grams Mushrooms
  • 100 ml Liquid Cooking Cream
  • Parmesan Cheese
  • Olive Oil
  • Salt and Pepper


1. Fill a pan with oil and place it on the heat to start sautéing the garlic cloves that you have previously cut into small pieces.

2. Add your selection of mushrooms cut into small pieces and sauté them for about 5 minutes, until they have lost all their water and start to turn golden brown.

3. Now it's time to sauté the spinach in the pan along with the mixture for about 8 minutes, until you see that they have reduced enough.

4. Pour the liquid cream over it and add the pieces of Iberian ham from Enrique Tomás, season to taste. Keep in mind that when adding ham to a recipe, we should reduce the amount of salt as this product already imparts intense flavor and a salty touch to the dish.

5. Add the three eggs and cover the pan to cook everything for about 2-3 minutes, until you see that the liquid cream is being absorbed and the eggs are lightly set.

6. Remove from heat and sprinkle the pieces of Parmesan cheese on top. You'll see them melt, leaving a delicious mixture. Enjoy!
