Paleta Gran Reserva (Serrano Shoulder Ham)

Our Paleta Gran Reserva is the everyday Spanish shoulder ham: mild, easy to enjoy and unbeatable value for money. It comes from white-breed pigs (Duroc, Landrace or Large White) raised on farms and fed on cereals, natural fodder and grass, which gives it the fine, gentle flavour that the whole family loves. Each piece is naturally cured for around fifteen months, longer than most white-pork shoulders, until the meat is tender and slices cleanly. Enjoy it whole, boneless or hand-sliced by our master ham carvers.

What makes our Paleta Gran Reserva special?

At Enrique Tomás, we have whole shoulders, but we also offer them sliced or boneless, why? Very simple. It's not the same to buy a shoulder to share with family and friends as it is for a meal or dinner for a small family.

Our packs of sliced shoulder weigh 80 grams and are hand-cut by our master ham slicers. This option is ideal for tasting right on the day of purchase, but if you prefer to cut them yourself, don't worry. We also have whole shoulders for you. As you can see, we have everything you need!

1.Rearing and cereal-based feed

Our Gran Reserva Shoulder comes from white-coat pigs raised on farms and fed a balanced diet based on cereals and quality feed. This diet makes it possible to obtain meat of excellent quality, with a pleasant texture and a smooth, balanced flavor.

2.Curing: time, drying shed and cellar

At Enrique Tomás, each Gran Reserva Shoulder is cured for over 15 months. This slow and progressive maturation process allows the fat to integrate naturally into the meat, developing a tender texture, a balanced aroma, and a smooth flavor with just the right touch of intensity that characterizes our Gran Reserva Shoulder.

How to recognise a Gran Reserva shoulder: white-breed pigs

Gran Reserva Paleta is made from white pigs, a category that is different from ibérico paleta. At Enrique Tomás, it is easy to identify thanks to our classification system: all our Gran Reserva Paletas carry an orange label and a 3-star rating. This makes it easy to recognise a paleta with leaner meat, a smooth and balanced flavour, and outstanding value for money.

Frequently asked questions about Paleta Gran Reserva

Is Paleta Gran Reserva the same as Serrano shoulder ham?

Yes. Gran Reserva Paleta is a serrano paleta made from white pigs. At Enrique Tomás, we use the Gran Reserva designation because our pieces are cured for more than 15 months, exceeding the minimum curing time required for this type of product. This extended curing process results in a paleta with a smooth, well-balanced flavour and outstanding value for money.

How do I store a shoulder ham once I've started carving it?

Once a whole Gran Reserva Paleta has been opened, it should be kept in a cool, dry place away from direct sunlight. Ideally, it should remain on a jamón stand, with the cut surface covered using a clean, lint-free cloth to protect the exposed meat. For the best flavour, texture and juiciness, we recommend consuming it within approximately two weeks after the first cut.

If you have chosen our pre-sliced paleta, keep the unopened packs in a cool, dry place. Once opened, store them in the refrigerator and remove them around 10 minutes before serving so they can recover their full texture, aroma and flavour.

What is the difference between Gran Reserva and Iberico shoulder?

The main difference lies in the breed of the animal. Gran Reserva Paleta comes from white pigs, whereas ibérico Paleta is made from Iberian pigs, whose genetics allow for a greater infiltration of fat into the meat.

As a result, ibérico Paleta offers a juicier texture and a richer, more complex flavour. Gran Reserva Paleta, on the other hand, stands out for its smooth, well-balanced taste, making it an excellent choice for those looking to enjoy a high-quality paleta with outstanding value for money.
