What does the White Label mean on Iberian Ham?

The white seal is the visual guarantee of the Iberian Quality Standard. It certifies that you are buying authentic Cebo Ham, from an animal that is at least 50% Iberian breed, raised intensively (on a farm) and fed exclusively on feed. It is the most economical option within the Iberian range without compromising on quality.

What is the difference between Cebo Ham and Acorn-Fed Iberian Ham?

The key difference is the diet and curing process. A cebo ham comes from pigs fed on feed, while an acorn-fed ham comes from animals raised in the wild and fed mainly on acorns. The higher the quality of the feed, the greater the complexity of flavor and the higher the value of the ham. The length of time the ham is cured is essential. Longer curing periods allow the ham to develop deeper aromas, a creamier texture, and a more intense flavor, which directly influences its final price.

Characteristics of our Iberian Cebo Ham

  • Breed: Crossbreed of 100% Iberian mother and Duroc father (which adds juiciness).
  • Curing: Minimum 24 months of resting in the bodega (cellar).
  • Flavour: Mild, Savoury, with nutty notes and a tender texture.
  • Format: Available in whole leg (approx. 8kg), boneless, or sliced.

FAQs about our Iberico grain-fed Ham

What is Iberico Cebo Ham?

It is a ham from a pig with at least 50% Iberian breed, farm-raised and fed on natural grain and cereals. It is always identified by the white label.

How long is White Label ham cured?

At Enrique Tomás, our Cebo hams undergo a minimum curing period of 24 months, the necessary time for the fat to infiltrate and the meat to mature correctly.

Why is Grain-Fed Iberian Ham cheaper?

It is more affordable because farm-raising allows for greater control over production and does not depend on the acorn season (Montanera), which reduces costs without sacrificing the essential Iberico genetics
